Terrapin Cookies Made with KOHLER® Original Recipe Chocolates
Years ago, Herb Kohler, chairman and CEO of Kohler Co., felt the world – and chocolate lovers especially – deserved a better take on the iconic chocolate turtle. He challenged the chefs of The American Club – one of only 36 hotels worldwide with both AAA Five Diamond and Forbes Five-Star ratings – to create the finest version in the world. In 2007, KOHLER Original Recipe Chocolates “Terrapins” were born. This delightful cookie recipe from The American Club features both Terrapins and KOHLER Original Recipe Chocolates Dark Mountain Toffee.
- 1-1/2 sticks butter, softened
- ½ cup white sugar
- ½ cup brown sugar
- ½ teaspoon salt
- 2 eggs
- 1-1/2 teaspoons vanilla extract
- 9 ounces flour
- ½ teaspoon baking soda
- 6 ounces Terrapin candies, roughly chopped
- 6 ounces Dark Mountain Toffee candies, roughly chopped
With an electric mixer on medium speed, mix butter, sugars and salt until well blended. Add eggs and vanilla. Mix for 30 seconds. Continue mixing on low and add flour and baking soda; blend for one minute to incorporate flour, then mix an additional 30 seconds. Place dough into a large metal bowl and add candy pieces. Mix by hand or use a large spatula. Chill 30-60 minutes.
Preheat oven to 350. Line two cookie sheets with parchment paper. Drop dough by rounded teaspoons onto pans. Bake for 8 minutes; rotate pans and bake an additional 8 minutes. Makes 3 dozen 3-inch cookies.
