2016 Demonstration Kitchen Series: Education Cooking Sessions Affording Culinary Enthusiasts the Opportunity to Engage with Professional Chefs

Destination Kohler Resort Chefs Host Educational Sessions Saturdays January through April 2016

KOHLER, Wis. – (December 16, 2015) – The annual Demonstration Kitchen series returns for another season of engaging sessions hosted by the culinary talents of Destination Kohler. Home cooks of all skill levels are afforded a delightfully delicious way to enhance cooking skills and expand their recipe box during educational programming in the intimate, informal working kitchen at The Shops at Woodlake. Each Saturday at 11am and 2pm, chefs demonstrate selected recipes from preparation to presentation to final tasting paired with a complementing beverage.

“The Demonstration Kitchen series truly offers a topic for every taste and is mutually beneficial for our team and guests,” said Tom McGinty, Executive Chef and Manager Food & Beverage for Destination Kohler. “The chefs enjoy getting out of the kitchen to share their passions and attendees revel in the opportunity to meet with and learn directly from the culinary talents behind the restaurants of Destination Kohler.”

This year’s topics vary from mastering traditional cooking skills such as pasta making to specific interests such as Paella and Dashi hosted by a variety of chefs, chocolatiers and pastry masters. A complete schedule is included below and is available online at DestinationKohler.com.

January 2 - New Year's Resolution: "Become a Better Cook"
Executive Chefs Matt Bauer and Tom McGinty – Destination Kohler
Take the first step toward being a better cook in 2016. Chefs Bauer and McGinty will share tips and techniques including the essential equipment you need for success in the kitchen, how to properly stock your pantry, basic knife skills and the journey from sauté pan to oven.

January 9 - Pasta Making at Home
Chef Trent Hazelberg – Cucina
Intimidated by the idea of making pasta at home? Chef Hazelberg will ease your fears and take you through the process from mixing ingredients to creating some of your favorite pasta shapes. He’ll also demonstrate how to make his personal favorite: squid ink linguine.

January 16 - Braised: Slow, Low Secrets
Chef Paul Smitala – Blackwolf Run
Discover how to get tender, juicy and flavorful meats with slow cooking. Chef Smitala will demonstrate how to use this convenient and delicious technique on some of his favorite meats including beef short ribs and pork roast, and he’ll also demonstrate the perfect sides.

January 23 - Party Appetizers & Winter Cocktails
Chef Zeke Fitzgerald and Peter Moeller – Horse & Plow
Winter’s the perfect time to gather friends or family. Make it fun with dinner party-style hors d’ oeuvres, fun cocktails and seasonal brews. This pair from The Horse & Plow will show you how to make Oysters Rockefeller, barbecue duck spring rolls and more.

January 30 - Desserts: Layers of Flavor
Executive Pastry Chef Josh Johnson – Destination Kohler
For Chef Johnson, nothing’s sweeter than Wisconsin-sourced ingredients. Join him and discover how to design satisfying, multi-texture and multi-flavor desserts with goat cheese, apples, maple syrup and other goodies from our state.


February 6 - Bayou Blast
Chef Dan Dries – Whistling Straits
Learn the difference between Creole and Cajun cuisines as well as the history behind some of the region’s most famous foods and techniques. Chef Dries will demonstrate how to prepare some traditional dishes like gumbo and jambalaya.

February 13 - Healthy Baking & Pastry
Chef Richard Palm – Destination Kohler
Join Chef Palm on Valentine’s Day weekend for a fresh approach to sweet treats. While sweet baking will never be completely healthy, you can learn how to make it better with whole grains and alternative sweeteners. Explore how to satisfy your sweet tooth with an apple cobbler featuring a delightful whole grain streusel topping and a better cream.

February 27 - The Art of Paella
Chef Josh Stefanko – The Wisconsin Room
Named for the style of pan it’s cooked in, paella is a dish with rich historical roots and regional variations. Join Chef Stefanko and learn how to prepare a “mixed” paella, or “paella mixta,” with seafood, chicken and Spanish chorizo. He’ll explore the nuances of traditional cooking while preparing a modern variation of this lovely family-style dish with endless possibilities for variation.


March 5 - Championship Recipes from Whistling Straits
Chef Tiffany Ringsletter – Whistling Straits
Ever wonder what it’s like to cook for a PGA Champion? Join Chef Tiffany as she recreates signature Championship recipes from Whistling Straits. Explore how the flavors of traditional Scotland come to life by creating salmon cakes, corned beef spring rolls and grilled tenderloin – all favorites of past PGA champions.

March 12 - Irish Feast with a Twist
Chef Evan Wallerman – Blackwolf Run
Just in time for St. Patrick’s Day, Chef Wallerman will put a much-needed twist on the classic corned beef and cabbage as well as colcannon potatoes. He’ll feature traditional Irish beers and spirits in the dishes and show you a cocktail to complement these Irish favorites.

March 19 - Field and Stream
Chef Lucas Oppeneer – Special Events
Wisconsin is known for its fishing and hunting opportunities, and for Chef Oppeneer that’s an opportunity for delicious, fresh ingredients. He’ll show different cooking techniques and talk about the hunting and fishing culture of Wisconsin and how it lends itself perfectly to the culinary world. Featured ingredients may include salmon, trout or walleye; venison; and pheasant or duck.

March 26 - Chocolate Skills
Chocolatier Anette Righi DeFendi and Gary Dinstuhl – KOHLER Original Recipe Chocolates
Learn techniques you can use at home from Kohler Original Recipe Chocolates’ experts. They’ll present a few basic chocolate skills such as tempering chocolate and proper dipping techniques.


April 2 - The Ultimate Bloody Mary Brunch
Chef Paul Smitala – Blackwolf Run
Want to host a memorable brunch right at home? Chef Smitala will show you how with a creative twist on eggs benedict. He’ll also demonstrate how to infuse vodkas for that special bloody mary.

April 9 - Dashi: The Art of Japanese Soup
Chef Josh Stefanko – The Wisconsin Room
Learn the history of Japanese broth and stock making as well as modern changes to the cultural norms of cooking in Japan during this informative and delicious demonstration by Chef Stefanko. He’ll show you how to prepare a Japanese soup known as kakejiru – a Japanese comfort food that can easily be replicated in a home kitchen.

April 16 - Gluten-Free Baking
Bakers Doug Stieber and Michelle Gehrig – Destination Kohler
If you’ve tried to alter your favorite recipes to make them gluten free, you’ve probably found that simply substituting a gluten-free flour for regular flour doesn’t work. Join Bakers Stieber and Gehrig to learn the tricks and explore great-tasting new recipes, some of them dairy free as well.

April 23 - Charcuterie at Home
Chef Joe Austreng – Riverbend
From pâtés to sausages, the charcuterie board has a long history and continues to grow in popularity at top restaurants throughout the country. Explore the age-old technique of preserving meats with salt, sugar and time as Chef Austreng demonstrates how to make authentic salmon gravlax, bacon and pancetta.

April 30 - Italian Cheese Making at Home
Chef Trent Hazelberg – Cucina
Looking for the next best thing for your caprese salad? Take cheese making to another level with Chef Hazelberg. He’ll show you how to make burrata, a stuffed fresh mozzarella, and how to infuse some fun flavors to your fresh mozzarella.
