Pinot noir is notoriously fickle to grow. If the vineyard is too hot, its finesse is gone. Too cold, its flavor is gone. Traditionally, especially in Burgundy, pinot noir is not blended with other grapes often exacerbating its fickle nature. More and more, especially in California, pinot noir is being blended with other varieties to compensate for imperfect pinot noir fruit leading to distorted flavor profiles. How do you achieve balance, concentration and ultimately enjoyment for this most fickle of grapes while using only 100 percent pinot noir. La Follette Wines prides itself on working with small family farmers who grow fruit to the right specifications to achieve ripeness and finesse.
